If a business gives you a free service but sells your data to be profitable / solvent using the cookies, and gives you an option to not sell the data but you have to pay that amount to use the service instead that seems completely fair to me… they aren’t running a charity, they’ve given you the 2 payment options
Anything else is taking their service without paying them, I really don’t see the issue here?
