Pork and beans tomato stew w/ sugared & fried noodles

  1. So, the weather is finally getting colder and this signifies a return to soups and stews. LIDL has been selling a cheap pork cut supposedly made for frying (what we Greeks call “tiganiá”) but after a few tries I gave up frying it because it always turns too stiff for human teeth to cut and started stewing them, which works great.

    Ingredients:

    * 250g. of mixed colorful large beans, or any medium to large beans you can buy, left in a bowl of room temperature water with 1 tsp. of salt and 0.5 tsp. of baking soda
    * 500g. of cubed pork, any cut should do but pork shoulder should work best
    * 1 large red onion, finely minced
    * 2 small carrots, diced
    * 1 500gr. can of pureed tomatoes, or 4 large fresh tomatoes, grated
    * 3 tbsp. tomato double concentrate
    * 1.5 tbsp. of Armenian sujuk seasoning
    * Salt, msg, sugar and boúkovo as per your taste

    You can substitute the Armenian seasoning with paprika, fenugreek, powdered garlic, pepper, cumin and allspice. It won’t be the same but it will be just as tasty. You can substitute the boúkovo with chili flakes.

    How:

    1. Drain and wash the beans.
    2. In a pressure cooker add beans and the rest of the ingredients and 2 cups of water.
    3. Set the pressure to max, heat until whistling and keep it there for 30 minutes.
    4. As soon as the 30 minutes are up, remove pressure cooker from heat and let the pressure fall naturally. When it does, remove the lid and return the pot to heat. Cook until the stew’s consistency is gloopy enough for your tastes.

    You can use a plain pot instead of a pressure cooker. It will simply take much more time but the process is the same: throw stuff in a pot, boil until gloopy.

    I mixed some leftover plain noodles with a tsp. of white sugar and fried it to add crunch, plus some green onion and dill.
