Sous Vide steak, maris piper chips and creamed spinach

    550 g baby spinach

    2 tbsp. butter

    1/2 medium onion, finely chopped or shallots

    2 cloves garlic, crushed

    120 ml milk

    60 ml double cream

    115 g cream cheese

    Salt

    Freshly ground black pepper

    pinch ground nutmeg

    25 g freshly grated Parmesan

    DIRECTIONS

    In large pot of boiling salted water, cook spinach for 30 seconds. Drain and place in a bowl of ice water.

    When cool enough to handle, drain and squeeze out as much excess water as possible. Coarsely chop.

    In a large pan over medium heat, melt butter. Add and onion and cook until soft, 5 minutes.

    Add garlic and cook until fragrant, 1 minute more.

    Add milk, double cream, and cream cheese to pan. Simmer until cream cheese is melted. Season with salt, pepper, and a pinch of nutmeg.

    Add spinach and Parmesan and stir to combine.
