  1. How do you control the moulding of a cheese? Presumably it can be dangerous if it becomes too mouldy?

  4. Can a cheese maker sell to you knowing they’ll get a better price because Neal’s Yard “celebrity” status compared to other shops?

  5. I may have committed a cheese faux pas last Boxing Day by spreading some leftover Camembert on toast to watch on the sofa and wallow in self-pity—after it had been left out overnight. Despite warnings/predictions of impending food poisoning, I survived unscathed. So, how long can you *responsibly* leave cheese out, or did I just narrowly dodge a bullet?

  8. What programs do you reccomend for someone looking to learn more about making & tasting cheese? I am not a professional but also not a newbie and having a hard time finding experiences that don’t seem too advanced or too basic.

  9. What cheese can you eat when pregnant? I know they say pasteurised, but can you eat hard cheeses even if not pasteurised?

  10. What is the thing that people don’t know about cheese that you wish everybody knew?

  11. I can’t remember the name of a cheese I had from your Borough Market should a few years back.

    The main thing I remember was that it tasted of toasted cheese – kind of like it had already been grilled and was on toast – it had the toasted bread flavours too.

    I think it was Irish, and either cow or sheep (I know, hazy memories). It was firm textured, not hard. I’m afraid I can’t remember much else

    Any ideas? I’d love to have it again. I don’t live in London anymore so can’t really pop into the shop

  12. Is there a viable method for cheese making when one is lactose intolerant? We have a cheesemaker’s kit at home but I’m concerned about all that full fat milk, and assume soya milk simply won’t work. Do substitutes exist in the process to accommodate? I love cheese but too much has adverse effects on me.

    Also: CHEESE.
