I went to Augustiner Bräu in Salzburg and absolutely loved it!

For the life of me, I can’t remember the names of these dishes – the ham on the left, the cold potatoes in the center, and the type of pork in the center. I believe it’s pork knuckle but could be wrong.

Please help me as I’m trying to make these at home and I miss them so much!

  1. Leberkäse (left)
    Stelze mit Erdäpflsalat (middle)
    Rahmgurkensalat (right)
Chips (top, not a traditional side dish)

    My guesses

Edit: corrected Selchroller to Stelze (pork knuckle)

  2. My guess: left is Leberkäs, center would ge Surbratn (but can’t tell what the thing is beneath it), top are just curled up fried potatoes and to the right i think was once a Gurkersalat with Obers

  3. Please note that Leberkäse is a bit like beer as in “there is a kind of base product that tastes the same everywhere but then agsin each producer adds different stuff so it tastes different.

Also theres variations with additional additives like chunks of cheese that melt (Käseleberkäse) or spicy chili (Pikanter Keberkäse) that are well liked.

  4. From Left to right:

Leberkäse , Selchfleisch or Stelze (its not the same, but could be both by the looks but i would rather guess its Selchfleisch, because Stelze has more crusty parts on it) mit Kartoffelsalat, Chipslocken and Gurkensalat

  5. Leberkäse – german/austrian spam

pork knuckle – eisbein or schweinshackse

    (german) vinegar potatoe salad

    potatoe chips

sth that looks like cucumber salad with a yoghurt & dill dressing

  6. Left: Leberkäse/meatloaf

Middle: Saftige Stelze/pork knuckle and Erdäpfelsalat/potato salad
