I want to visit Southern Germany — specifically, Munich, Nuremberg, Bamberg, and Rothenburg Ob Der Tauber.
I feel like 8 days might be a little too short for all four. What do you think? If 4 cities is too much, which one should I cut between Bamberg and Rothenburg?
I would be visiting in early December.

Those cities are not small towns and you need to travel to each of ’em. So if you like to see these cities and enjoy them with all its attractions, you need at least one day better too. Don’t forget you need to travel by car, or train or anyhow which takes also some hours. I would mention to take more time.
Yes, 8 days is enough for that.
Bamberg is a bit bigger and has more to see than Rothenburg, so if time is a factor I’d cut Bamberg since it requires more time. Rothenburg is very small, so one day usually should suffice.
All in all 8 days should be ok. Take a few days for Munich, a bit less for Nürnberg and the rest for Rothenburg and/or Bamberg. Traveling between those cities doesn’t take more than 2 hours by car or train, so you can easily switch cities.
2 nights in Munich, 1 each for Nuremberg, Bamberg and you might as well visit Passau or Regensburg while you’re close by
If you have some spare time Würzburg is also worth a visit. The “Residenz” and “Festung” are worth seeing.
Don’t know where you are staying, but easily reachable by train.

Salzburg isn’t far from Munich too, and I heard it’s a very pretty place to visit.
I have visited all of these cities/towns as a german (living in Augsburg). Besides Munich, they were all a day trip for me. I did stay a night in Bamberg though (many breweries) and maybe a day more in Nürnberg could have worked, but I don‘t think I missed much. With the christmas markets there is also more to see in December.
Therefore 8 days is plenty. Most time spent in Munich. And if you get bored there, they are plenty day trip options (Dachau, Neuschwanstein Castle, Mountains, multiple big lakes, even Augsburg).
between Rothenburg and Munich: take a break in Nördlingen or Dinkelsbühl. not that touristic and more authentic. i would prefer these two and would not go to nuremberg…..
Nuremberg is nice but was bombed totally in ww2. there are better places i think.

honestly… in my opinion Munich is not worth the detour, if you’re around Würzburg, Bayreuth and Nuremberg. Regensburg would even be more interesting. I’ve live in Munich myself for many years and I seriously can’t think of anything truly worthwhile there, that doesn’t have a more charming alternative in smaller bavarian cities.
